  • the protecting of freshly pressed juice from contact with oxygen by using antioxidants such as sulphur dioxide or by preventing the juice from reacting with oxygen by chilling it. Both methods ensure that the juice retains its fresh, primary fruit flavours and does not lose its bright green colour (the juice would slowly yellow in contact with oxygen).
