  • To freeze food so that it spends a minimum of time between 0°C and –4°C, the region where ice crystals would, if given the time, grow to such a size as to rupture cell walls releasing their contents on thawing. Usually done by blasting with liquefied gases. Quick frozen food is usually stored at around – 30°C.
