  • The thread-like mycelium of a fungus grown industrially in a medium made principally from the starch content of field beans. It contains about 45 per cent protein and 13 per cent fat together with dietary fibre, and after drying and compounding is used as a high-class protein in vegetarian meals, both made up and home cooked.
