  • masculine One of the oldest mild french cheeses from Haute Savoie made with the later part of the cows’ milking which has the higher fat content. It is shaped like a wider and thinner Camembert with a soft supple centre and a deep orange to red-coloured washed rind. It is packed between very thin wooden discs and does not go runny like Camembert. It has a pleasant buttery flavour with a fruit finish when young but becomes bitter when old. Protected by an appellation d’origine.
