  • A Ghanaian dish of dried cow peas or black-eyed beans soaked in water, skins and all debris removed, then boiled with just sufficient water to cook them. They are then mixed with onions and tomatoes fried in red palm oil together with red pepper. Reconstituted dried shrimps or fish or smoked fish may be added and simmered with a little extra water. Often served with kelewele.
