- To allow a yeast dough to increase in size by the production of bubbles of carbon dioxide within it or a baked dish or cake to similarly increase in size by the action of heat on air bubbles entrapped in the mix, e.g. soufflés, or the production of carbon dioxide by reactions of chemical raising agents.
