- A large group of seawater fish of the genus Sebastodes found off rocky coasts in most parts of the world. Generally 30 to 90 cm long weighing 1 to 2.5 kg. The flesh is white to pink turning to white when cooked, and is firm, flaky and mid-oily. May be poached, baked or grilled. One of the more common in the USA is the striped bass.
