  • A puff pastry made with the conventional turns to build up layers but the fat is mixed with the flour in the form of solid cubes 1 to 2 cm on the side and water added to make the dough, keeping the cubes as intact as possible. The flour fat ratio is 4:3. Used only where scrap puff pastry would be used e.g. pies, palmiers.
