  • An enriched yeast-raised thick batter made with a mixture of besan, wheat flour, eggs and clarified butter (2:1:4:1) with a little ground rice to give the right consistency, then flavoured with ground cardamom seeds and saffron powder. Spoonfuls are deep-fried at 190°C for about 4 minutes, drained and soaked in a cardamom-flavoured heavy sugar syrup. Served warm.
