  • A semi-hard cows’ milk cheese from the Dordogne cast in large discs (up to 2 kg). It is salted and ripened in caves for 60 days. The smooth paste has an aromatic flavour and a slight smell of mildew. It has appellation d’origine status. Contains 45 per cent water, 25 per cent fat and 23 per cent protein.
