  • A sauce usually based on oil and an acid such as vinegar, lemon juice or possibly yoghurt, either a stable or unstable emulsion, seasoned and flavoured with herbs, spices, garlic, etc. Generally used to coat very lightly the components of a salad especially leaves, but occasionally to bind the ingredients together
