  • A large fat duck rubbed inside and out with coarse dry sea salt and left in a cool place for 2 to 3 days, it is then rinsed and simmered slowly in stock or water with a bouquet garni, preferably in a double boiler until thoroughly cooked. Usually served with onion sauce.
