saltfish and akee



  • A mixture of diced salt pork fried in its own fat and reserved, chopped onion, sweet peppers, chillies, spring onions and tomatoes fried in the same fat with a sprig of thyme and all combined and heated with deskinned, deboned and flaked poached saltfish plus the creamy parts of akee which have been boiled in the saltfish poaching liquor for 15 minutes
