  • A hard, dark-yellow grating cheese made from unpasteurized cows’ milk. A lactic whey starter is used and the curd is hard cooked, gathered in cheesecloths, moulded in up to 25 kg lots, pressed and brined for 3 weeks then matured for 6 to 12 months. It is also made in Germany, France and Italy.
