  • A spherical-spine covered animal, Paracentrotus lividus and other species, up to 8 cm in diameter which lives on rocky coasts in all oceans and seas. The spines require careful handling. They are opened when alive and the orange-coloured ovaries are removed and either eaten raw or used as a garnish. Must be live when purchased and consumed as soon as possible.
