  • Cooked vegetables, e.g. dried beans, mushrooms, aubergines, courgettes containing as little moisture as possible, combined with a sesame seed sauce made from dry-roasted white sesame seeds pounded with sugar, vinegar, mirin, salt and bean curd which has been boiled for 3 minutes and wrung out in a cloth. The sauce should be smooth and sticky.
