Snowdon pudding



  • A boiled pudding made from suet, fresh breadcrumbs, brown sugar, lemon marmalade and ground rice (6:6:4:4:1) and lemon zest well mixed, to which is added beaten eggs equal to twice the weight of the sugar. This mixture is poured into a thickly buttered pudding basin lined with raisins, covered and boiled for about 90 minutes.
