  • A cheese made with the retention of much of the whey so it has a high water content. The limits of water content are 80 per cent for low-fat (2 to 10 per cent butterfat), 70 per cent for medium-fat (10 to 20 per cent butterfat) and 60 per cent for full-fat (greater than 20 per cent butterfat) soft cheeses.
