- A fatless, flourless type of Swiss roll made from eggs, caster sugar, milk and cocoa powder (8:4:5:1). The egg yolk and sugar are creamed and mixed with milk and cocoa powder, the stiffly beaten egg whites folded in, all baked in a Swiss roll tin at 180°C, rolled, cooled, filled with whipped cream and decorated.
