- Puddings based on sweetened suet pastry or a cake sponge mixture with additions and flavourings, cooked in a pudding basin, in a cloth or in a special hinged closed container using either steam or boiling water. Usually served with a sweet sauce which may be cooked as an integral part of the pudding.
