  • A very old Buckinghamshire dish which is a

    gelatine

    -stabilised mixture of milk combined with lightly

    whipped cream

    and egg whites, sweetened with

    vanilla sugar

    and poured before setting into glasses with jam on the base. Approximately equal quantities of milk and cream are used and gelatine is required at the rate of 40 to 50 g per litre of liquid.
