  • the process of adding sugar to grape must in order to increase the alcoholic strength of a wine. Adding sugar at this fermentation stage of the winemaking does not increase the sweetness of the wine. Although this process is necessary and legal in cold climates, where the lack of sun does not produce enough sugar in the grape, the process is often illegal and unnecessary in countries with hot climates.
