- A potato and cheese soup from Moldavia made from chopped onions and carrots sautéed in butter until golden, simmered with chopped potatoes, seasoning, paprika, cayenne pepper and parsley in chicken stock, puréed, consistency adjusted and hard ewes’ milk cheese (Brynza, Ektori or equivalent, 50 to 100 g per litre) dissolved in over a low heat
