Sussex plum heavies



  • A cake made from self-raising flour, butter, currants and caster sugar (8:6:3:1). One third of the butter is rubbed into the flour and currants to make a dough, which is rolled into a rectangle and the remaining butter is used to make two three-fold turns (see puff pastry). This is formed into a cake shape, glazed with milk and baked at 200°C for 30 minutes.
