  • A herb, Origanum majorana, with aromatic grey-green leaves from the Mediterranean and western Asia now grown in France, Chile, peru and California. Used in Italian cooking and with lamb, chicken and oily fish. Since it has a delicate flavour which is destroyed by cooking it should be added at the last moment.
