- An Iraqi dish of lambs’ tripe and feet or shanks which are blanched then simmered with well-soaked chick peas, noomi and a whole unpeeled head of garlic. Sweated chopped onions, chopped tomatoes and baharat are then added and all simmered for 2 hours. It is served over flat bread with the meat and tripe on top.
