- A clear spiritous liquor made by distilling fermented sap from the blue agave. It is produced and bottled only in Jalisco state, Mexico, and originated around the town of Tequila and has denomination of origin status. It has the same relationship to mescal as cognac has to brandy and is used in cooking in the same way as brandy. The finest is designated añejo (‘aged’) and is aged in oak barrels for at least a year.
