  • masculine A semi-hard cows’ milk cheese closely associated with the Trappist monks and made in most countries where they had monasteries. It resembles Port-Salut with a smooth close-textured paste containing a few holes covered with a soft rind. Usually cast in 3 kg discs. Contains about 45 per cent water, 25 per cent fat and 22 per cent protein.
