- A highly decorated pickled herring salad where the herring is deboned and skinned and rearranged in a herring shape on a dish. It is then surrounded with chopped vegetables in a vinaigrette sauce thickened with hard-boiled egg yolk, and decorated with slices of hard-boiled eggs, beetroot and chopped spring onions.
