  • A very large (up to 45 kg) marrow-type vegetable, Benincasa hispida, from China with a thin hard waxy green skin, resembling a water melon in appearance. The flesh is cooked by steaming, braising or simmering. Cubes of the flesh are slit, stuffed and steamed as dim sum. The flesh and skin may also be candied or pickled. The skin lends itself to the carving of elaborate patterns.
