  • The most accurate method of measuring ingredients using the gravitational force exerted on the material to deflect a calibrated spring or by balancing the weight of the ingredient against a known weight using a lever. Weights are measured in grams (g) and kilograms (kg) and tonnes (1000 kg) in the metric system used in most countries and in ounces (oz) and pounds (lb) in the imperial system still in use in the USA. Other cultures, especially in country districts, still use local measures.
