  • a variation on the normal red wine fermentation process in which the winemaker keeps some of the whole grapes separate while the bulk is crushed, pressed and then fermented. The whole grapes are added during fermentation, extending the fermentation process and reducing the tannin level of the wine and adding more of a berry flavour.
